Limoncello & Olive Oil Cake
Summer is almost here, or at least, that’s what the calander says. It doesn’t feel much like summer yet in Boston. The temparatures aren’t there and the constant wind and drizzle makes it feel more like autumn. But nothing cheers me up or gets me in a “Summery in the Amalfi Coast” kind of mood more than lemony desserts. I have a fondness for anything with lemon and if a recipe calls for both limoncello and zest, than you know it’s going to be delicious!
This is a pretty straightforward recipe that will make you feel like you’re vacationing in Capri, or Sorrento. Ok, who am I kidding, that’s quite a stretch, but at the very least, it will make for a delicious match to an espresso or a shot of limoncello!
