Those were the two pivotal questions to kick off Jordan Salcito’s presentation yesterday in New York, at the start of VINO 2017, a trade show and tasting organized by the Italian Trade Commission exclusively for wine industry professionals and media. Salcito, Wine Director at the Momofuku restaurant group, spoke to a room full of Italian producers about the trends she’s seeing and the consumer demands that are driving them.
